Harissa Spiced Fish with Feta
Ingredients
- Salmon fillet 140g
- 30g crumbled feta
- Finely sliced red onions, 20g
- 50g red pepper sliced
- 100g mixed salad leaves
- Serve 1 lemon wedge
- 1 tbsp jalapenos
- 1 tsp harissa paste
- 10g Flat Leaf Parsley, Chopped
- 1 tsp olive oil
- 1 tsp of balsamic vinager
METHOD
Pre-heat the oven to 170degC.
Add the salmon to a baking tray lined with parchment or foil.
Top with harissa paste, half the crumbled jalapenos and feta cheese.
Bake the salmon fillet for 15 to 20 minutes in the oven.
Pour the balsamic and olive oils over the salad leaves in a bowl.
Add the remaining feta, red pepper slices, and red onion slices, and season with salt and pepper.
Mix well, and serve.
Add the salmon, squeeze the lemon and sprinkle the parsley.
